Cantering,cupcakes and cats

Hey fabulous bloggies!    Sorry I haven’t  blogged in a while,  I’ve been really, really , I mean really busy with school!    Anyway, you might be wondering what cantering means.  It means one speed faster than trotting on a horse.  I have been cantering with no hands!  So, let me tell you the story (it is a pretty good story). It was my first time in a western saddle and I was sooooo nervous.  I was on a lunge line ( if you are wondering what a lunge line is, it is a really long line) and I just started trotting and my mom said,”Lets canter.”  We negotiated for about 30 minutes! Then I said ,”YESSS!!!!!!!!”  It was the best thing I had ever done!!  Then about a week after my awesomely awesome trainer got me to canter with one hand-OMG!!!  Then two or three days later I …..cantered with no HANDS!!!!!!!!!!!!!!!!!!!!!!!!!!!  I just love cantering.  Now I am cantering in a English saddle.

Today I feel like Nancy Drew. This morning my mom saw a tan dog sized CAT!   My mom could tell it was a cat because it was walking like a cat, except it was running into a bush. Now it is the Mystery of the Cat.  My mom saw a glimpse of the cat.  I have searched and searched online for pictures of the cat, but I  can’t find that cat.  The mystery continues….

This week I feel like a baking expert!    So you are probably wondering why I feel like a baking expert.  So this week I made 4 different recipes.  Lemonade,strawberry watermelon lemonade aka waterberryade,strawberry orange cupcakes (I will have the recipe down below) and strawberry filling ( I will also put the recipe down below). I have been watching cupcake wars so that’s why I’ve made 4 different recipes. I have just been in the baking  mood!  I guess its time for me to go to barn. 🙂 More cantering adventures!  Happy Easter!!!

 

Kitten’s delicious strawberry orange cupcake

Ingredients

3 cups all-purpose gluten free flour               4 eggs

4 teaspoons baking powder                               2 teaspoons orange extract

1 teaspoon salt                                                        1 teaspoon vanilla extract

1 cup shortening                                                     2/3 cup almond milk

2/3 cup agave                                                  1/2 cup pureed fresh strawberries and orange zest

 

Directions

1.   Preheat oven to 335 degrees

2. Mix and sift flour,baking powder and salt together in a large measuring cup

3. Cream shortening ,agave, eggs and extracts in a large mixing bowl until smooth.

4. Stir flour mixture, 1 cup at a time, and milk, 1/3 at a time, into creamed mixture until a well formed batter forms; stir in strawberry and orange zest puree

5. Pour batter into prepared cupcake tins

6. Bake in preheated oven until a toothpick inserted in the middle of the cupcake comes clean, 15-25 minutes

7. Cool cupcakes completely or pop in the freezer for about 20 minutes

Frosting:

Ingredients

1 can vanilla frosting

Orange zest to taste

1/2 tsp Orange extract

1/3 cup powdered sugar

Directions

Blend well

Filling

Ingredients

1 1/4 cups coarsely chopped strawberries

1 tbl agave

1 tbl cornstarch

Directions

Add all to a saucepan and bring to a low boil while stirring. When it gets thicker, take off heat and put in the refrigerator to cool quickly.

To fill cupcakes: Carefully scoop out the middle of cupcake and spoon in cooled filling. Frost over the top. Place a slice of strawberry on the top. Enjoy!

Last week we went to Oahu, Hawaii.  It was sooooo much fun.  Here is my diary.

The day we got in was Halloween and I saw so many costumes. Adults, kids, tweens and teens. For dinner we went to a place called The Cheese Burger. It was good. I went trick or treating in the outside mall. I was so tired from the plane and the time change I wanted to go to bed early.

We went to the Dole Plantation and we got a Dole Whip. For those of you who don’t know what a Dole Whip is, it is a dairy free sorbet, pineapple flavored. You can get them at Disneyland also. We went to the beach at the North Shore. The sand was hot and the water was cold. The waves were HUGE! I went in belly deep.

We went to Waimea Falls. We swam in the waterfall. The water was freezing cold and my moms legs got numb. The walk up to it was hard. We saw Monkeypod trees on the way up. My moms favorite tree now. We walked through the jungle.

We went paddle boarding in a lagoon. I liked standing up on the board and zig zagging. The food from the restaurant there looked really gross, but was really good when I ate it. I rented snorkel gear and I didn’t like it, so I traded it in for another hour of paddle boarding.

Wednesday November 4, 2015

We went to Pearl Harbor. We saw the USS Arizona memorial, the USS Bowfin submarine (fun fact, it was named after a feisty fish), the USS Bowfin Museum ( was awesome), the Battleship USS Missouri, and the Aviation Museum. I liked the Bowfin the best and then the Aviation Museum second best. They had audio tours that tell more stories and tell more than what you read on the displays. I got many souvenirs here. Here is the list: pencil sharpener, Walters new dog tag, a Pearl Harbor Survivor book- it is SIGNED!!!, and a  USS Arizona T shirt.

We went back to the lagoons to paddle board again. We had a crazy adventure. Me and my mom were paddle boarding and it was really windy. It took us over to the wrong side of the lagoon and we had to walk all the way to the other side with our paddle boards because we wereIMG_0014 IMG_0016 IMG_0026 IMG_0027 IMG_0028  too scared to try to paddle board over there with the strong wind.

We looked at Diamond head. It was pretty boring to me since I am an 8 year old 😉 We went to Hanauma Bay, same thing, it is a sight seeing place-pretty boring. And then we left Hawaii.  It was sad when I left. I wanted to cry but I didn’t. It was a 5 hour long flight. My mom read to me for 3 hours and now she can’t read-lol!  It was a book called My Secret War: World War II Diary of Madeline Beck. It was very interesting.

The week of Aunt Judy

This week my Aunt Judy came for a visit all the way from Washington state. Monday night my Aunt Judy came.   We had In-n- Out ( for those who don’t no what In-n -Out is it is a hamburger place). Then we watched the Seahawks. We won and it was AWESOME! Tuesday my Aunt came  to hiphop class with me and I did a dance for her.  That night we did watercolor painting of chickadees. Wednesday we went to Lowe’s to go pick out colors for abstract art the next day. I got a pinkish color, minty fresh and white. Thursday we did the abstract and my turned out great! :)lol    Friday (today) is a relaxing day 😉

My new fish

Hello my fabulous friends!  Today I got a Betta fish from Petco.  I will tell you the story of how I got it.  One night, me and my mom were getting ready to go to bed when I said,” Hey mom?  What if I took care of our fish for a month and at the end you got me my own Betta?”  My mom said, “Yes!”  🙂  To keep track, I wrote the days on the fish tank in dry erase marker. 30 days later, here I am with my own Betta.  That my fabulous friends is the story of how I got my Betta!

The random post

Hello my fabulous friends. This week I sprained my foot at a trampoline park while I was jumping with my friend and her sister.  I was jumping on to a air pillow and there wasn’t enough air in it. I hit the ground and that was not a trampoline. The next time I jumped off the side and the same thing happened. I sprained my foot, but don’t worry I don’t have a splint or crutches. 😦    My mom took me to the doctor and they took and X-ray. I didn’t know that X-rays were done the way they are. I thought there was a big screen and they would take a picture of it and show me. I have never had an X-ray before so I had no idea what they did.

Last night my Aunt Judy came all the way from Washington state  (I live California) and I got to see her. 🙂 She is here to celebrate her 75th birthday with us. She is a sweet lady. She sent me a Seahawks pillow case that she made because I used to live in Washington. She made me a blanket and personalized stationary. I feel happy when I get a box in the mail from her!

Our friend Erin flew in Thursday from Washington and we went night swimming. Today we are going to Farrell’s and swimming with her.

I missed you my fabulous bloggies. It is me, the blogger-lol! I haven’t been on my blog for awhile. I was enjoying the last part of summer. I went swimming a lot this summer. It was one of my favorite things to do. My favorite person to swim with is Papa because he is slow and I can beat him at races.  My second favorite person to swim with is Grandma because she doesn’t notice me swimming underwater to tickle her feet.

This year I started 2nd grade and we are homeschooling. It has been fun, so far;) I have read boatloads of books. Like Judy Moody from the library. I am half way done with the second Judy Moody book that I got. My mom is reading to me Little House in the Big Woods. Today we went to the barn and read it to the horses. The horses were interested in the book:) It was really hot, but I love being them.

A week or two ago

Hey, my fabulous friends, sorry I haven’t written in a while.  Not to long ago, it was my dad’s birthday. We made him a big sign with lights to surprise him.  We also made him a cake and our friends who had the red neck slip n slide, came over and had dinner and cake.  Last Sunday, I went my grandparents house for a few days because my mom and dad forgot that Monday was their own anniversary. I had to go so they could celebrate….Wa-wa-wa.  All you can do there is eat junk food,sleep and swim. I had a good time.

It has been pouring down rain in California and it is 100 in Washington. In Washington a lot of people don’t have air conditioning, so that is really hot!

4th of July

 Yesterday I went to a friends house and we had a little 4th of July party.  They had this massive redneck slip n slide  and it was like 40 feet up.  I went down it and it was AWESOME!  They have a pool.  A little while later we went in it and it was cold.  When it got darker and we fed the horses ( our friends live on at our barn, so I got to see my horses).  Then we went on the slip n slide again.  That did not go very well because I had my first crash into the hay bale. But don’t worry, I am ok.  A little later…  we got back in the pool and it was WARM and it felt so good.  We went on a walk at night through the jungly forest and  the trees rustled and…  BOO- a rat came out.  Just kidding LOL!  Not  long after we heard the noise, we got to the road and that concluded our walk. We watched fireworks and roasted s’mores and that was the end of our fun night.

What I want to be when I grow up

IMG_4900My queen grandma asked me to write about what I want to be when I grow up. What I want to be when I grow up is a horse trainer.  What makes me want to be a horse trainer is just being around horses. I really love the smell of the tip of their nose, it smells like heaven.

Susie Chapstick asked me what I missed about Washington and what I loved about California since I moved. I miss my best friends, but one of them is coming to CA in August and one in November. What I love about California is the weather-it is AWESOME! I get to ride my horses daily. That will help me be a better horse trainer.

My horses

Hi my fabulous friends! I have 2 horses.  Their names are Alpine and Leo.  Alpine is 15 and I ride him.  Leo is 6 and my mom rides him.  My mom says that I am to young to to ride Leo so my mom makes me ride Alpine.  Alpine is not bad, but he moves very slow.  But when he canters it is like he is a blur.  Alpine’s socks are red,white,white,red.  Alpine’s fur is a chestnut color.  Alpine’s breed of horse is Arabian. In this picture I am standing on Alpine. Leo moves fast, but not to fast.  Leo does not have any socks.  Leo has white hair and yellowish fur.  Leo’s breed of horse is a Haflinger.  He has a breathing problems.  So tell me what you thought and tell me what you want me to writeIMG_4749 about.
