Hey fabulous bloggies! Sorry I haven’t blogged in a while, I’ve been really, really , I mean really busy with school! Anyway, you might be wondering what cantering means. It means one speed faster than trotting on a horse. I have been cantering with no hands! So, let me tell you the story (it is a pretty good story). It was my first time in a western saddle and I was sooooo nervous. I was on a lunge line ( if you are wondering what a lunge line is, it is a really long line) and I just started trotting and my mom said,”Lets canter.” We negotiated for about 30 minutes! Then I said ,”YESSS!!!!!!!!” It was the best thing I had ever done!! Then about a week after my awesomely awesome trainer got me to canter with one hand-OMG!!! Then two or three days later I …..cantered with no HANDS!!!!!!!!!!!!!!!!!!!!!!!!!!! I just love cantering. Now I am cantering in a English saddle.
Today I feel like Nancy Drew. This morning my mom saw a tan dog sized CAT! My mom could tell it was a cat because it was walking like a cat, except it was running into a bush. Now it is the Mystery of the Cat. My mom saw a glimpse of the cat. I have searched and searched online for pictures of the cat, but I can’t find that cat. The mystery continues….
This week I feel like a baking expert! So you are probably wondering why I feel like a baking expert. So this week I made 4 different recipes. Lemonade,strawberry watermelon lemonade aka waterberryade,strawberry orange cupcakes (I will have the recipe down below) and strawberry filling ( I will also put the recipe down below). I have been watching cupcake wars so that’s why I’ve made 4 different recipes. I have just been in the baking mood! I guess its time for me to go to barn. 🙂 More cantering adventures! Happy Easter!!!
Kitten’s delicious strawberry orange cupcake
3 cups all-purpose gluten free flour 4 eggs
4 teaspoons baking powder 2 teaspoons orange extract
1 teaspoon salt 1 teaspoon vanilla extract
1 cup shortening 2/3 cup almond milk
2/3 cup agave 1/2 cup pureed fresh strawberries and orange zest
1. Preheat oven to 335 degrees
2. Mix and sift flour,baking powder and salt together in a large measuring cup
3. Cream shortening ,agave, eggs and extracts in a large mixing bowl until smooth.
4. Stir flour mixture, 1 cup at a time, and milk, 1/3 at a time, into creamed mixture until a well formed batter forms; stir in strawberry and orange zest puree
5. Pour batter into prepared cupcake tins
6. Bake in preheated oven until a toothpick inserted in the middle of the cupcake comes clean, 15-25 minutes
7. Cool cupcakes completely or pop in the freezer for about 20 minutes
1 can vanilla frosting
Orange zest to taste
1/2 tsp Orange extract
1/3 cup powdered sugar
1 1/4 cups coarsely chopped strawberries
1 tbl agave
1 tbl cornstarch
Add all to a saucepan and bring to a low boil while stirring. When it gets thicker, take off heat and put in the refrigerator to cool quickly.
To fill cupcakes: Carefully scoop out the middle of cupcake and spoon in cooled filling. Frost over the top. Place a slice of strawberry on the top. Enjoy!
